Pickled aubergines in extra virgin olive oil – a classic Italian side dish.
The best aubergines are processed immediately after harvest. After removing all the water present, they are blanched in water and vinegar. They are then put into jars, flavoured with herbs and covered with a good extra virgin olive oil.
